Yummy Monday

Mozzarella, Spinach, and Tomato Scramble

Ingredients

3 Egg Whites whisked with 1 TBSP. Water


1 Cup Fresh Spinach Leaves


1 Cup Diced Plum Tomatoes


¼ Cup Part-Skim Shredded Mozzarella Cheese


½ of A Whole Wheat Light English Muffin, Toasted


Nonstick Cooking Spray


Preparation



Heat a nonstick skillet coated with nonstick spray over medium heat.


Add the whisked eggs and allow to cook for about 2 to 3 minutes.


Add spinach, tomatoes, and cheese, mix together and cook for 2 to 3 additional minutes.


Serves with toasted English muffin half.

Hi, this looks good and I would try it but I am a vegetarian that does not eat eggs. Can you post some veg-recipes? Especially breakfast ones. I get tired of the fruit and oatmeal, and need to change-up. Thanks
