Shrimp Bruschetta

Serves: 24
6 oz. (about 1 cup) diced, cooked shrimp
1 cup shredded fat-free. mozzarella cheese
3/4 cup chopped plum tomatoes (about 2 1/2 medium)
3/4 cup chopped fresh spinach
1/4 cup chopped scallions
1 tsp. crushed fresh garlic
1 tsp. dried oregano
1 long, thin loaf French bread
Combine all ingredients except bread in a medium bowl. Mix well and set aside. Slice bread into 24 1-inch slices. Arrange slices on a baking sheet and bake at 300 degrees F for 12-15 minutes or until crisp and dry. Spread each slice with 1 tablespoon shrimp mixture. Increase oven temperature to 400 degrees F and return to oven for five minutes of until cheese melts. Serve hot.

I just had a suggestion. In the Turbo Jam info-mercial, they show people doing turbo jam in a concert stage like setting. There are lights flashing in all different directions. (Lots of color) The ceiling is almost like a warehouse ceiling. It actually looks like a dance-club atmosphere. I think it would be more motivating and less "exercise tape-like." It would have more of a "club" setting and less sterile. If there isn't one, it might be something to consider for the future. It even shows people doing Turbo-Jam outside in the info-mercial. That would be more interesting as well. Just a suggestion! This is the only place I found where it seems like you might get this message! Sorry that it's unrelated to your blog!

I just fell into the world of Turbo Jam and I am loving every minute. I initially got on the program to drop a few pounds - nothing major... but I have been absolutely amazed on how your program has improved my daily life!! I feel more energized at work - and there is always a smile on my face. I already tried some of your fabulous recipes that you have posted... they are so fast and easy, yet incredibly flavorful... you should really think about putting together a cookbook for the gal on the go! In any case, I look forward to your next blog!!

You and I went to high school together in Michigan. You even stood up in my wedding in 1985 (I have pictures to prove it! ha ha). I haven't seen or talked to you since then. But one day I turned on the TV and there you were! I always knew you would be famous. Even in high school you had such energy, charisma and magnetism that everyone wanted to be near you. We were also in a play together and I just pulled out some old pictures and newspaper clippings of us. Hard to believe it was so long ago.
