YUMMY MONDAYS: Cottage Cheese Power Pancakes


1/2 cup old fashioned oatmeal
1/4 cup low fat cottage cheese
5 egg whites
1/2 apple peeled, cored and quartered
1 scoop vanilla protein powder
Few drops vanilla extract
1/4 tsp nutmeg
1/4 tsp cinnamon
1 tbsp flaxseed

PS... If you must have that yummy sweet sticky maple syrup lucky for us our friends at Splenda have joined Mrs. Butterworth and they now offer a sugar free option with far less calories and sugar so you can enjoy that sticky sweetness without feeling so guilty. But of course use it gingerly because although low in calories it does not mean that it has zero calories!!!

INSTRUCTIONS:
Place all ingredients in a food processor or blender. Process until mixture is smooth. Meanwhile, heat griddle or nonstick skillet to medium heat. Pour 1/4 to 1/2 batter onto hot surface and cook until bubbles start to appear on top. Flip and cook the other side until golden.

NUTRITION FACTS PER SERVING: 514 cals, 6g fat, 508mg sodium, 59g carbs, 9.5g dietary fiber, 15g sugar, 51g protein

Hi Chalene!!!
I am a student at Penn State University and I involved in the University's Dance MaraTHON. AKA THON, which is a 46 hour no sleeping no sitting dance-a-thon. We are the largest student run philanthropy in the world, and have raised over 40 million dollars for pediatric oncology research, and support for the patients. I really don't think I will ever be a part of a greater thing in this world. This year I am a committee member for Morale, this means I am not dancing, but I am the support person for one of the 700 students dancing. My dancer this year is a huge fan of yours, and I know that receiving a letter of encouragement from you would be amazing for her. Please let me know if it is at all possible for you to send something for when she is dancing. Thanks again, and I hope to get a post back from you!

Chalene, I just wanted you to know that I started Turbo Jam 2 weeks ago. I am a person who HATED to workout. I am 27 and I also have arthritis in my back. I finally hit rock bottom when at 5'3" I weighed in at 148. I am so so happy to say that you and Turbo Jam have totally turned me around. I have now lost 13lbs. I am happier, more energetic and my boyfriend who is a fitness freak is so proud of me. Thank you so much! Your my inspiration and a hero!

First and foremost, let me thank you for Turbo Jam. I've always been active and fit, but two years ago extensive back surgey left me unable to run to stay in shape. A friend introduced me to your workouts, which kept me active during my recovery, and two years later I do them every day (at full intensity now of course!). I've bought your DVDs as gifts for friends and I swear by your methods. So thank you.
A tip for this post - Cary's Syrup. It's sugar free and is a sponsor for the American Diabetes Association. It only has 30 calores per serving. Which is the lowest calorie syrup I've been able to find, and it tastes amazing!

Hi Chalene!

Unrelated to your post, but I just wanted to say that I cry every time I do your videos. Not because I don't like it, quite the opposite. For the first time in my whole life of being a heavy girl, I actually like working out!! The first time I did the learn and burn I actually had tears streaming down my face and a big smile because I couldn't believe there was finally something I could do that I wouldn't hate. I love your videos, I love all the turbo jam crew, and most of all, I love you!! You have given me inspiration I never thought I was capable of finding. I have a lot of weight to shed, but I am confident I can do it with the tools you've given me. I hope to be one of your success stories by next year. I hope you know how powerful your spirit is and how many people you have helped.

thanks Charlene. It's been almost 3 months now since i've been turboing and i'm loving it. my friend borrowed my first cd wich has the 'learn & burn', advanced turbo and the sculpt class so i've been stuck with the 40 min Cardio Party Mix for almost a month now and i'm still not bored yet...he he he...i'm glued to the 40 min one cos i feel most satisfied at the end....i have a question tho pls...i'm having some back pains which i don't quite understand if it's something i'm doing wrong in terms of my technique.....do you think? otherwise, you are an inspiration...TRULY!!!...THANK YOU!!!!...KEEP UP THE POSITIVE ATTITUDE....LOVE IT....HI TO THE TURBO TEAM....I FOLLOW MINDY & ANA RITA COS I CAN'T JUMP DUE TO KNEE PROBLEMS....THIS IS WHY I LOVE TURBO JAM COS I'M ABLE TO EXERCISE DOING LOW IMPACT THE WHOLE TIME W/OUT PUTTING TOO MUCH STRESS ON MY KNEES...HELLO I'M APPROACHING 30 YEARS AND I'M FALLING APART ALREADY....

First, Chalene, I want to say Thanks! I love the workouts. I had such a hard time getting into something. Like you say in your videos, "If it isn't fun you won't do it!" It's very fun. I love the idea of mixing martial arts with dance. I love both so the workouts really appeal to me. I just ordered a second set of DVD's and I'm excited about putting them into the rotation.

When I was younger I could never complete a mile in less than 12 minutes. Even though I was thin I wasn't necessarily fit. I've been going several days a week in addition to my Turbo Jam workouts. Today, I ran 2 miles less time than it use to take to me run one! I was so stoked!

Also, I love your recipes. I can be creative and healthy and my kids will eat it, too. :)
