YUMMY MONDAY: The Perfect Hard Boiled Egg

I don't know anyone who enjoys peeling a hard boiled egg only to have half of it peel off with the shell!!  And all your left with is an egg that looks all mangled!!  Well I am here to tell you how to cook them so the peel is easily removed and your left with a smooth and beautiful egg.

Place eggs carefully in a sauce pan and fill with water so all eggs are completely covered with water and not crowded in pan.

Place pan on stove over High heat.

Just as soon as water begins to boil turn heat down until water is just a simmer.

Let simmer uncovered for 20 mins.

Remove pan from heat and immediately replace the boiling water in pan with cold water, let eggs sit in cold water for 1 to 2 mins.

I always have a bowl in my frig full of HB eggs, and I am able to grab and peel one very easily.
I usually slice egg in half toss yolk and mix the egg whites with chopped fresh tomato and a little salt and pepper. Its makes a great low cal snack

For Deviled egg lovers try replacing the deviled egg yolk mixture with hummus or Trader Joe's Eggplant Hummus.  Sooooooo Yummy!!

I love hb eggs. My mom used to boil eggs when we were kids and draw faces on the shells so we knew which ones were the boiled ones.

Thanks for the helpful tip. I seem to lose half my egg-white when peeling it; because the shell doesn't come off easily!

I've been eating alot more eggs ever since I started your program because it's a very easy way to get protein in on the go. ( I have a 10 week old and 3 year old, so things are very hectic.) I'm going to try this. Now I won't need to worry about getting egg shells all over the drivers seat console anymore. LOL!

I love this idea. I just made Easter deviled eggs with Garlic herb blend and relish, colored the whole egg with food coloring so my eggs were beautiful. Hummus is a fantastic idea. HB eggs are so easy I just had 2 while reading this. Thanks.
